Non-Biological Turbidity: formation of colloidal haze caused by low molecular polyphenols cross-linked with higher weight proteins due to weak molecular reactions
Colloidal Haze is generally formed during cold fermentation and / or maturation of beer.
Haze forming properties are usually removed from the beer during clarification / filtration practices (i.e.,centrifuge or kieseguhr filtration)
In sufficient quantities these reactions can continue after clarification /filtration into the final packaged product (i.e., snow globe effect)
Two general types of haze, Chill Haze or Permanent Haze
